Ingredients

- 1 lb chicken breast
- 2 cups vegetable broth
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Place the chicken breast in the slow cooker.
- Add the vegetable broth, carrots, celery, onion, garlic, thyme, salt, and pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken and mix well.
- Serve hot.
Notes
- Adjust seasoning to taste.
- You can add other vegetables as desired.
- Store leftovers in the refrigerator for up to 3 days.
