Ingredients

- 1 lb chicken breast, diced
- 4 cups chicken broth
- 2 cups mixed vegetables (carrots, peas, corn)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp thyme
- 1 bay leaf
- 2 cups noodles (optional)
Instructions
- Place chicken, broth, vegetables, onion, and garlic in the crockpot.
- Add salt, pepper, thyme, and bay leaf.
- Cover and cook on low for 6-8 hours.
- If using, add noodles in the last 30 minutes of cooking.
- Remove bay leaf before serving.

- Can substitute turkey for chicken.
