A crunchy chicken romesco sandwich with a flavorful sauce.
Ingredients

- 2 slices of bread
- 1 cooked chicken breast, sliced
- 2 tablespoons romesco sauce
- 1 cup lettuce
- 1 slice of cheese
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a pan.
- Toast the bread until golden brown.
- Layer the chicken slices on one slice of bread.
- Add romesco sauce on top of the chicken.
- Place lettuce and cheese on top.
- Cover with the second slice of bread.
- Press down and cut in half.
Notes
- Use whole grain bread for more fiber.
- Feel free to add other vegetables.
- Romesco sauce can be made ahead of time.
