Ingredients

- 1 cup almond milk
- 1/2 cup coconut sugar
- 1 cup pumpkin puree
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1/4 teaspoon salt
- 1 cup gluten-free flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix almond milk, coconut sugar, pumpkin puree, maple syrup, and vanilla extract.
- Add cinnamon, nutmeg, ginger, and salt. Stir well.
- In another bowl, combine gluten-free flour, baking powder, and baking soda.
- Gradually mix dry ingredients into the wet mixture until smooth.
- Pour batter into a greased baking dish.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Serve with dairy-free whipped cream.
- Store leftovers in an airtight container.
- Can be made a day in advance.
