Delicious dairy-free side dishes for Thanksgiving.
Ingredients

- 2 cups of fresh green beans
- 1 cup of sliced mushrooms
- 1 tablespoon of olive oil
- 2 cloves of garlic, minced
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/4 cup of chopped fresh parsley
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and trim the green beans.
- In a large bowl, toss the green beans and mushrooms with olive oil, garlic, salt, and pepper.
- Spread the mixture on a baking sheet.
- Roast in the oven for 20 minutes, stirring halfway through.
- Remove from oven and sprinkle with chopped parsley before serving.
Notes
- Feel free to add other vegetables like carrots or bell peppers.
- Adjust seasonings to your taste.
- This dish can be made ahead and reheated.
