Ingredients

- 1 cup of quinoa
- 2 cups of vegetable broth
- 1 can of black beans, rinsed and drained
- 1 cup of corn
- 1 red bell pepper, chopped
- 1 avocado, diced
- 1 tablespoon of olive oil
- 1 teaspoon of cumin
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat and cover. Simmer for 15 minutes.
- In a bowl, mix black beans, corn, bell pepper, and avocado.
- Fluff quinoa with a fork and add to the vegetable mixture.
- Drizzle with olive oil and sprinkle with cumin, salt, and pepper.
- Toss to combine and serve warm.

- This recipe is suitable for the Daniel Fast.
- Feel free to add other vegetables.
- Store leftovers in the fridge for up to 3 days.
