Ingredients

  • 1 cup of quinoa
  • 2 cups of vegetable broth
  • 1 can of black beans, rinsed and drained
  • 1 cup of corn
  • 1 red bell pepper, chopped
  • 1 avocado, diced
  • 1 tablespoon of olive oil
  • 1 teaspoon of cumin
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat and cover. Simmer for 15 minutes.
  4. In a bowl, mix black beans, corn, bell pepper, and avocado.
  5. Fluff quinoa with a fork and add to the vegetable mixture.
  6. Drizzle with olive oil and sprinkle with cumin, salt, and pepper.
  7. Toss to combine and serve warm.
