Ingredients

  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of cumin
  • 2 tablespoons of olive oil
  • 4 cups of vegetable broth
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Rinse the rice and lentils under cold water.
  2. In a pot, heat olive oil over medium heat.
  3. Add chopped onion and garlic, sauté until soft.
  4. Add cumin and stir for 1 minute.
  5. Add rice, lentils, vegetable broth, salt, and pepper.
  6. Bring to a boil, then reduce heat and cover.
  7. Simmer for 20 minutes or until rice and lentils are tender.
  8. Remove from heat and let it sit for 5 minutes.
  9. Fluff with a fork and serve warm.
