Ingredients

  • 2 pounds of beef chuck, cut into 1-inch cubes
  • 4 cups of beef broth
  • 1 cup of carrots, sliced
  • 1 cup of potatoes, diced
  • 1 cup of onions, chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of tomato paste
  • 1 tablespoon of Worcestershire sauce
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat.
  2. Add beef and brown on all sides.
  3. Remove beef and set aside.
  4. Add onions and garlic to the pot, sauté until soft.
  5. Stir in tomato paste and Worcestershire sauce.
  6. Add beef back to the pot along with broth, carrots, potatoes, thyme, salt, and pepper.
  7. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
  8. Check seasoning and serve hot.

Notes

  • For a thicker stew, mix 2 tablespoons of cornstarch with cold water and add to the stew near the end of cooking.
