A hearty and flavorful beef stew perfect for any occasion.
Ingredients

- 2 pounds of beef chuck, cut into 1-inch cubes
- 4 cups of beef broth
- 1 cup of carrots, sliced
- 1 cup of potatoes, diced
- 1 cup of onions, chopped
- 2 cloves of garlic, minced
- 2 tablespoons of tomato paste
- 1 tablespoon of Worcestershire sauce
- 1 teaspoon of dried thyme
- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat.
- Add beef and brown on all sides.
- Remove beef and set aside.
- Add onions and garlic to the pot, sauté until soft.
- Stir in tomato paste and Worcestershire sauce.
- Add beef back to the pot along with broth, carrots, potatoes, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
- Check seasoning and serve hot.
Notes
- For a thicker stew, mix 2 tablespoons of cornstarch with cold water and add to the stew near the end of cooking.
- Serve with crusty bread for a complete meal.
