Ingredients

- 4 flour tortillas

Instructions
- Heat olive oil in a pan over medium heat.
- Add diced onions and bell peppers, sauté until soft.
- In a bowl, whisk the eggs with salt and pepper.
- Pour eggs into the pan with vegetables and scramble until cooked.
- Warm tortillas in another pan or microwave.
- Spoon egg mixture onto each tortilla and top with cheese.
- Roll up the tortillas and serve hot.
