Ingredients

- 2 lbs of meat (beef, chicken, or pork)
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 potatoes, diced
- 4 cups broth (chicken or beef)
- 1 tsp salt
- 1 tsp pepper
- 2 tbsp olive oil
- 1 tsp thyme
Instructions
- Heat olive oil in the Dutch oven over medium heat.
- Add meat and brown on all sides.
- Remove meat and set aside.
- Add onion and garlic, sauté until soft.
- Add carrots and potatoes, stir for 2 minutes.
- Return meat to the pot.
- Add broth, salt, pepper, and thyme.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 1.5 to 2 hours or until meat is tender.
- Serve hot.
Notes
- Adjust cooking time based on meat type.
- Feel free to add other vegetables.
- Can be made ahead and reheated.
