Ingredients

Scale
  • 2 lbs of meat (beef, chicken, or pork)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 4 cups broth (chicken or beef)
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tbsp olive oil
  • 1 tsp thyme

Instructions

  1. Heat olive oil in the Dutch oven over medium heat.
  2. Add meat and brown on all sides.
  3. Remove meat and set aside.
  4. Add onion and garlic, sauté until soft.
  5. Add carrots and potatoes, stir for 2 minutes.
  6. Return meat to the pot.
  7. Add broth, salt, pepper, and thyme.
  8. Bring to a boil, then reduce heat to low.
  9. Cover and simmer for 1.5 to 2 hours or until meat is tender.
  10. Serve hot.

Notes

  • Adjust cooking time based on meat type.
  • Feel free to add other vegetables.
