Easy air fryer chicken quesadillas recipe
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 large flour tortillas
- 1/2 cup bell peppers, diced
- 1/2 cup onion, diced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 375°F (190°C).
- In a bowl, combine shredded chicken, cheese, bell peppers, onion, olive oil, garlic powder, cumin, salt, and pepper.
- Spread the mixture evenly on half of each tortilla.
- Fold the tortillas in half to encase the filling.
- Place the quesadillas in the air fryer basket in a single layer.
- Cook for 8-10 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the air fryer and let cool for a minute before slicing.
Notes
- You can add black beans or corn for extra texture.
- Experiment with different cheeses for varied flavors.
- Serve with salsa or guacamole for dipping.
