A quick and simple recipe for making crispy egg rolls in an air fryer.

- 1 cup shredded cabbage
- 1/2 cup shredded carrots
- 1/2 cup cooked and chopped shrimp
- 1/4 cup chopped green onions
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1 package egg roll wrappers
- Cooking spray
Instructions
- In a bowl, combine cabbage, carrots, shrimp, green onions, soy sauce, and garlic powder.
- Lay an egg roll wrapper on a clean surface with a corner pointing towards you.
- Place 2 tablespoons of the filling at the center of the wrapper.
- Fold the bottom corner over the filling, then fold in the sides, and roll tightly.
- Repeat with remaining wrappers and filling.
- Preheat the air fryer to 375°F (190°C).
- Spray the egg rolls lightly with cooking spray.
- Place egg rolls in the air fryer basket in a single layer.
- Cook for 12-15 minutes or until golden brown, flipping halfway through.
Notes
- Consider adding protein variations like chicken or tofu.
- Serve with sweet and sour sauce or soy sauce for dipping.
- For a spicier kick, add chili flakes to the filling.
