Instructions
- Preheat the air fryer to 375°F (190°C).

- In another bowl, combine breadcrumbs and Parmesan cheese.
- Dip each eggplant slice into the egg mixture, then coat with the breadcrumb mixture.

- Arrange the breaded eggplant slices in a single layer in the basket.
- Spray the tops lightly with cooking spray.
- Air fry for 15-20 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the air fryer and let cool slightly before serving.
