A simple and delicious recipe for veggie skewers made in an air fryer.
Ingredients

- 1 bell pepper, cut into 1-inch pieces
- 1 zucchini, sliced into rounds
- 1 red onion, cut into wedges
- 8 cherry tomatoes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 400°F (200°C).
- In a bowl, combine the olive oil, garlic powder, smoked paprika, salt, and pepper.
- Add the vegetables to the bowl and toss until they are evenly coated.
- Thread the vegetables onto skewers, alternating between types.
- Place the skewers in the air fryer basket in a single layer.
- Cook for 10-12 minutes, turning halfway through, until the veggies are tender and slightly charred.
- Remove from the air fryer and serve immediately.
Notes
- Feel free to use any vegetables you prefer.
- For added flavor, marinate the veggies for an hour before skewering.
- Serve with a dipping sauce for extra taste.
