- 2 cups fresh corn kernels
- 1 cup all-purpose flour
- 1/2 cup milk
- 2 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped green onions
- Oil for frying
Instructions
- In a bowl, mix corn, flour, milk, eggs, baking powder, salt, and pepper.
- Add chopped green onions and stir until combined.
- Heat oil in a skillet over medium heat.
- Drop spoonfuls of the batter into the skillet.
- Cook until golden brown on each side, about 3-4 minutes.
- Remove and drain on paper towels.
Notes
- Serve warm with dipping sauce.
- Can add spices for extra flavor.
- Store leftovers in the refrigerator.
