This easy burrito casserole is a delicious and quick meal that combines all your favorite burrito ingredients into one dish.

- 1 lb ground beef
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 4 cups tortilla chips
- 2 cups shredded cheese
- 1 cup sour cream
- 1/4 cup chopped green onions
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the ground beef over medium heat until browned.
- Add black beans, corn, diced tomatoes, and taco seasoning. Mix well and cook for 5 minutes.
- In a baking dish, layer half of the tortilla chips on the bottom.
- Spread half of the beef mixture over the chips.
- Sprinkle 1 cup of cheese on top.
- Repeat the layers with remaining chips, beef mixture, and cheese.
- Bake for 20 minutes or until cheese is melted and bubbly.
- Remove from oven and top with sour cream and green onions before serving.
Notes
- You can substitute ground turkey for a leaner option.
- Feel free to add jalapeños for extra heat.
- This dish can be made ahead and stored in the fridge for up to 2 days.
