Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheese
  • 1/2 cup salsa
  • 4 large flour tortillas
  • 1 avocado, sliced
  • 1/4 cup sour cream
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add shredded chicken, cumin, salt, and pepper. Cook until warmed through.
  3. Stir in rice, black beans, and salsa. Mix well and cook for 2-3 minutes.
  4. Warm tortillas in a separate pan for 1 minute on each side.
  5. Place a portion of the chicken mixture in the center of each tortilla.
  6. Add cheese and avocado slices on top.
  7. Fold the sides of the tortilla over the filling, then roll it up tightly.
  8. Serve with sour cream on the side.

Notes

  • For added flavor, marinate chicken in spices before cooking.
  • Substitute black beans with pinto beans if preferred.
