Ingredients

  • 2 chicken breasts, boneless and skinless
  • 1/2 cup flour
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1/2 cup chicken broth
  • 2 tablespoons capers
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Flatten the chicken breasts to an even thickness.
  2. Season with salt and pepper.
  3. Dredge the chicken in flour.
  4. Heat olive oil in a pan over medium heat.
  5. Cook the chicken until golden brown, about 5 minutes per side.
  6. Remove chicken and set aside.
  7. Add lemon juice, chicken broth, and capers to the pan.
  8. Bring to a simmer and return chicken to the pan.
  9. Cook for an additional 5 minutes.
  10. Garnish with parsley before serving.
