- 1 pound chicken breast, diced
- 1 tablespoon chipotle sauce
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 avocado, sliced
- 1 cup salsa
- 1/2 cup shredded cheese
- 1/4 cup fresh cilantro, chopped
Instructions
- Cook the rice according to package instructions.
- In a skillet, cook the diced chicken over medium heat until browned.
- Add the chipotle sauce to the chicken, stirring well.
- In a large bowl, combine the cooked rice, chicken, black beans, and corn.
- Top the mixture with avocado, salsa, cheese, and cilantro.
- Serve immediately.
