- 200g mixed dried fruit
- 100g butter
- 150g sugar
- 3 eggs
- 200g all-purpose flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 100g chopped nuts
Instructions
- Preheat your oven to 180°C (350°F).
- In a bowl, mix the dried fruit with chopped nuts.
- In another bowl, cream butter and sugar until fluffy.
- Add eggs one at a time, mixing well after each.
- Combine flour, baking powder, and cinnamon; gradually add to the wet mixture.
- Fold in the fruit and nut mixture.
- Pour the batter into a greased cake tin.
- Bake for 30-40 minutes or until a toothpick comes out clean.
- Let it cool before serving.
Notes
- Store the cake in an airtight container.
- Can be decorated with icing or fruits.
- Best served after a day for flavors to develop.
