- 2 cups Greek yogurt
- 1 cup cream cheese
- 1/2 cup sugar
- 1/4 cup lime juice
- 1 tablespoon lime zest
- 1 teaspoon vanilla extract
- 1 cup graham cracker crumbs
- 1/4 cup melted butter
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs with melted butter.
- Press the mixture into the bottom of a springform pan.
- In a separate bowl, beat cream cheese and sugar until smooth.
- Add Greek yogurt, lime juice, lime zest, and vanilla extract. Mix until well combined.
- Pour the cheesecake mixture over the crust.
- Bake for 30 minutes or until set.
- Let cool, then refrigerate for at least 4 hours before serving.
Notes
- Use fresh limes for the best flavor.
- Let the cheesecake chill overnight for better texture.
- Top with lime slices or whipped cream if desired.
