  • 1 can diced tomatoes (14.5 oz)
  • 4 cups chicken broth
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and sausage, cooking until browned.
  3. Stir in onion, bell pepper, celery, and garlic; cook until softened.
  4. Add rice and Cajun seasoning; mix well.
  5. Pour in chicken broth and diced tomatoes; bring to a boil.
  6. Reduce heat, cover, and simmer for 20 minutes.
  7. Add shrimp, cover, and cook for an additional 5 minutes.
  8. Fluff rice with a fork and serve hot.
