- 1 pound chicken, diced
- 1 pound andouille sausage, sliced
- 1 pound shrimp, peeled and deveined
- 2 cups rice
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 4 cups chicken broth
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken and sausage, cooking until browned.
- Stir in onion, bell pepper, celery, and garlic; cook until softened.
- Add rice and Cajun seasoning; mix well.
- Pour in chicken broth and diced tomatoes; bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Add shrimp, cover, and cook for an additional 5 minutes.
- Fluff rice with a fork and serve hot.

- Use fresh herbs for added flavor.
- Leftovers can be stored in the fridge for up to 3 days.
