- 4 flour tortillas
- 2 cups shredded cheese (cheddar or Monterey Jack)
- 1 cup cooked chicken, shredded
- 1/2 cup bell peppers, sliced
- 1/4 cup green onions, chopped
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a skillet over medium heat.
- Place one tortilla in the skillet.
- Sprinkle half of the cheese evenly over the tortilla.
- Add shredded chicken, bell peppers, and green onions on top of the cheese.
- Top with the remaining cheese and cover with another tortilla.
- Cook for 3-4 minutes or until the bottom tortilla is golden brown.
- Carefully flip the quesadilla and cook for an additional 3-4 minutes.
- Remove from skillet and let it cool for a minute before slicing.
