A simple and delicious Russian beet salad with a blend of flavors.
Ingredients

- 3 medium beets, peeled and boiled
- 1 medium carrot, grated
- 1 small onion, finely chopped
- 1 cup pickles, diced
- 1/2 cup cooked peas
- 1/4 cup mayonnaise
- Salt and pepper to taste
Instructions
- Boil the beets until tender, then let them cool.
- Grate the cooled beets and carrot into a large bowl.
- Add the chopped onion, diced pickles, and cooked peas.
- Mix in the mayonnaise and season with salt and pepper.
- Toss everything together until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.

- Use fresh beets for the best flavor.
- Customize with other vegetables if desired.
