- 2 cups cooked chicken, diced
- 1 cup carrots, diced
- 1 cup peas
- 1 cup potatoes, diced
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1/3 cup butter
- 1/3 cup all-purpose flour
- 2 cups chicken broth
- 1 cup milk
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 pie crust, store-bought or homemade
Instructions
- Preheat your oven to 425°F (220°C).
- In a large skillet, melt the butter over medium heat.
- Add onions and garlic, sauté until soft.
- Stir in carrots, peas, and potatoes. Cook for 5 minutes.
- Sprinkle flour over vegetables, stir to coat.
- Gradually add chicken broth and milk, stirring continuously until thickened.
- Add cooked chicken, thyme, salt, and pepper. Mix well.
- Remove from heat, and transfer the mixture to a pie dish.
- Cover with pie crust, sealing the edges. Cut slits in the top for steam to escape.
- Bake for 30-35 minutes, until crust is golden brown.
- Let cool for 10 minutes before serving.

- Variations can include adding mushrooms or corn.
- For a healthier option, use whole wheat flour.
