Instructions
- In a large bowl, combine black-eyed peas, bell peppers, red onion, and cilantro.
- In a separate bowl, whisk together olive oil, red wine vinegar, lime juice, garlic powder, cumin, salt, and pepper.
- Pour the dressing over the bean mixture and toss to combine.
- Cover and refrigerate for at least 1 hour to allow flavors to meld.
- Serve chilled or at room temperature.
Notes
- For extra heat, add diced jalapeños.
