A simple and flavorful soup with Thai red curry and dumplings.
Ingredients

- 1 tablespoon vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon red curry paste
- 4 cups vegetable broth
- 1 can coconut milk
- 1 cup frozen dumplings
- 1 cup spinach
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- Fresh cilantro for garnish
Instructions
- Heat oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Stir in red curry paste, cook for 1 minute.
- Pour in vegetable broth and coconut milk, bring to a boil.
- Add frozen dumplings, cook for 5-7 minutes.
- Stir in spinach, soy sauce, and lime juice.
- Simmer for another 2 minutes.
- Serve hot, garnished with cilantro.
Notes
- Use any type of frozen dumplings.
- Adjust curry paste to taste.
- Store leftovers in the refrigerator for up to 3 days.
