A simple and flavorful soup with Thai red curry and dumplings.


Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon red curry paste
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 1 cup frozen dumplings
  • 1 cup spinach
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Stir in red curry paste, cook for 1 minute.
  4. Pour in vegetable broth and coconut milk, bring to a boil.
  5. Add frozen dumplings, cook for 5-7 minutes.
  6. Stir in spinach, soy sauce, and lime juice.
  7. Simmer for another 2 minutes.
  8. Serve hot, garnished with cilantro.
