- 2 cups green beans, trimmed
- 1 cup sliced mushrooms
- 1/2 cup chopped onion
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine green beans, mushrooms, onion, and garlic.
- Drizzle with olive oil, salt, and pepper.
- Toss to coat evenly.
- Spread mixture on a baking sheet.
- Bake for 20 minutes or until vegetables are tender.
- Sprinkle Parmesan cheese on top and bake for an additional 5 minutes.
Notes
- Can substitute Parmesan with nutritional yeast for a vegan option.
- Feel free to add other vegetables like bell peppers or carrots.
