  • 2 large eggs

  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5 inch loaf pan.
  3. In a large bowl, mix together the grated zucchini, sugar, and oil.
  4. Add the eggs and vanilla extract; mix well.
  5. In another bowl, combine flour, baking soda, baking powder, salt, and cinnamon.
  6. Gradually add the dry ingredients to the wet ingredients; stir until just combined.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
