Ingredients

  • 6 egg whites
  • 1 cup spinach, chopped
  • 1/2 cup bell peppers, diced
  • 1/2 cup tomatoes, diced
  • 1/4 cup onion, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix egg whites, spinach, bell peppers, tomatoes, onion, salt, pepper, and garlic powder.
  3. Grease a muffin tin with cooking spray.
  4. Pour the egg mixture evenly into the muffin tin.
  5. Bake for 20-25 minutes or until the muffins are set.
  6. Let them cool before removing from the tin.
