Description

A classic Italian dish made with layers of breaded eggplant, marinara sauce, and cheese.


Ingredients

  • 2 medium eggplants, sliced
  • 1 cup breadcrumbs
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 cup flour
  • 2 eggs, beaten

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplants and sprinkle with salt. Let them sit for 30 minutes to draw out moisture.
  3. Dredge the eggplant slices in flour, dip in beaten eggs, and coat with breadcrumbs.
  4. Fry the eggplant slices in oil until golden brown on both sides.
  5. In a baking dish, spread a layer of marinara sauce.
  6. Layer fried eggplant, marinara sauce, Parmesan, and mozzarella cheese. Repeat layers.
  7. Top with remaining mozzarella and Parmesan cheese.
  8. Bake for 30-35 minutes until cheese is bubbly and golden.
  9. Let it cool for 10 minutes before serving.

Notes

  • You can add fresh basil for extra flavor.
  • Use gluten-free breadcrumbs for a gluten-free version.
  • Allow leftovers to cool completely before storing in the refrigerator.
