Ingredients

- 2 medium eggplants, diced
- 1 red onion, chopped
- 2 tomatoes, diced
- 1 cucumber, diced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt to taste
- Pepper to taste
- Fresh parsley, chopped
Instructions
- Preheat the grill to medium heat.
- Grill the diced eggplants until tender, about 10 minutes.
- In a large bowl, combine grilled eggplants, onion, tomatoes, and cucumber.
- In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss gently.
- Garnish with fresh parsley before serving.
