- 2 cups elbow macaroni
- 1 cup mayonnaise
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, diced
- 1/2 cup bell pepper, diced
- 1/4 cup parsley, chopped
- Salt and pepper to taste
Instructions
- Cook elbow macaroni according to package instructions. Drain and cool.
- In a large bowl, combine mayonnaise, salt, and pepper.
- Add cooled macaroni, tomatoes, cucumber, red onion, bell pepper, and parsley to the bowl.
- Toss well to coat all ingredients with dressing.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Adjust vegetables to your taste.
- Can be made a day in advance.
- Add protein like chicken or tuna for extra nutrition.
