Description
A delicious falafel wrap served with hummus and tahini dressing.
Ingredients

- 1 cup dried chickpeas, soaked overnight
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon baking powder
- Salt to taste
- Oil for frying
- 4 large whole wheat wraps
- 1 cup hummus
- 1/4 cup tahini
- 2 tablespoons lemon juice
- Water to thin tahini dressing
- Mixed greens for filling
Instructions
- Drain and rinse soaked chickpeas.
- In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, and salt. Pulse until combined but not pureed.
- Form mixture into small balls or patties.
- Heat oil in a deep pan over medium heat. Fry falafel until golden brown, about 3-4 minutes per side.
- Remove falafel and drain on paper towels.
- In a bowl, mix tahini, lemon juice, and water to achieve desired consistency.
- Warm wraps in a pan or microwave.
- Spread hummus on each wrap, add falafel, and drizzle with tahini dressing.
- Top with mixed greens and roll the wrap tightly.
- Cut in half and serve immediately.
Notes
- You can bake falafel at 375°F for a healthier option.
- Experiment with spices like paprika or cayenne for added flavor.
- Consider adding pickled vegetables for a tangy crunch.
