Ingredients

  • 1 cup dried chickpeas, soaked overnight
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon baking powder
  • Salt to taste
  • Oil for frying
  • 4 large whole wheat wraps
  • 1 cup hummus
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • Water to thin tahini dressing
  • Mixed greens for filling

Instructions

  1. Drain and rinse soaked chickpeas.
  2. In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, and salt. Pulse until combined but not pureed.
  3. Form mixture into small balls or patties.
  4. Heat oil in a deep pan over medium heat. Fry falafel until golden brown, about 3-4 minutes per side.
  5. Remove falafel and drain on paper towels.
  6. In a bowl, mix tahini, lemon juice, and water to achieve desired consistency.
  7. Warm wraps in a pan or microwave.
  8. Spread hummus on each wrap, add falafel, and drizzle with tahini dressing.
  9. Top with mixed greens and roll the wrap tightly.
  10. Cut in half and serve immediately.

  • You can bake falafel at 375°F for a healthier option.
  • Experiment with spices like paprika or cayenne for added flavor.
