- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 2 cups shredded cheese
- 1 cup rice, uncooked
- 2 cups chicken broth
- 1/2 cup diced bell peppers
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the chicken, black beans, corn, salsa, chili powder, cumin, rice, bell peppers, and chicken broth.
- Pour the mixture into a greased casserole dish.
- Top with shredded cheese.
- Bake for 30-35 minutes until the rice is cooked and cheese is bubbly.
- Let it cool for a few minutes before serving.

- Feel free to add more vegetables as desired.
- This dish can be made ahead and frozen.
