- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1/4 cup black olives, pitted and chopped
- 2 tablespoons capers, rinsed
- 1 teaspoon red pepper flakes
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Heat olive oil in a pan over medium heat.
- Add minced garlic and sauté until fragrant.
- Add diced tomatoes, olives, capers, and red pepper flakes. Simmer for 10 minutes.
- Season fish fillets with salt and pepper.
- Place fish in the sauce and cook for 5-7 minutes, until fish is cooked through.
- Garnish with parsley before serving.
