- 4 large eggs
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1 tablespoon coconut oil (for cooking)
Instructions
- In a bowl, mix cottage cheese, eggs, vanilla extract, salt, and baking powder until smooth.
- Heat coconut oil in a non-stick skillet over medium heat.
- Pour batter onto the skillet, making small pancakes.
- Cook until bubbles form on the surface, about 2-3 minutes.
- Flip and cook for another 2-3 minutes until golden brown.
- Serve warm with your favorite toppings.
Notes
- Adjust the thickness of the batter by adding more or less cottage cheese.
- Top with fruits or syrup for added flavor.
- Store leftovers in the refrigerator for up to 3 days.
