A creamy and flavorful Hawaiian mac salad, perfect for food trucks.
Ingredients

- 2 cups elbow macaroni
- 1 cup mayonnaise
- 1/2 cup milk
- 1 cup diced carrots
- 1/2 cup diced celery
- 1/2 cup green onions, chopped
- 1/4 cup sweet pickle relish
- Salt and pepper to taste
Instructions
- Cook the macaroni according to package instructions. Drain and let cool.
- In a large bowl, mix mayonnaise and milk until smooth.
- Add carrots, celery, green onions, and relish to the bowl.
- Combine the cooled macaroni with the dressing and mix well.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- For extra flavor, add diced ham or cooked shrimp.
- Can be made a day in advance for better taste.
- Adjust the amount of mayonnaise to your preference.
