Ingredients

- 6 large eggs
- 1 cup diced bell peppers
- 1 cup diced onions
- 1 cup cooked sausage or bacon
- 1 cup shredded cheese
- 6 large flour tortillas
- Salt and pepper to taste
Instructions
- In a large bowl, whisk together eggs, salt, and pepper.
- In a skillet, sauté bell peppers and onions until soft.
- Add cooked sausage or bacon to the skillet and mix well.
- Pour the eggs into the skillet and scramble until fully cooked.
- Remove from heat and stir in the cheese.
- Lay out tortillas and distribute the egg mixture evenly among them.
- Wrap the tortillas tightly and place them in a freezer-safe bag.
- Freeze for up to 3 months.

- Reheat in the microwave for 1-2 minutes.
- Customize with your favorite ingredients.
