A classic French onion soup recipe featuring rich flavors and a perfect balance of textures.
Ingredients
Scale
- 4 large yellow onions, thinly sliced
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon sugar
- 8 cups beef stock
- 1 cup dry white wine
- 1 bay leaf
- 1 teaspoon fresh thyme, chopped
- 1 baguette, sliced
- 2 cups Gruyere cheese, shredded
- Salt and pepper to taste
Instructions
- Melt butter and olive oil in a large pot over medium heat.
- Add onions, salt, and sugar. Cook slowly, stirring occasionally, until caramelized, about 30-40 minutes.
- Deglaze the pot with white wine, scraping up any browned bits. Cook until wine reduces by half.
- Add beef stock, bay leaf, and thyme. Simmer for 30 minutes.
- Season with salt and pepper to taste. Remove bay leaf.
- Preheat oven to broil.
- Toast baguette slices until golden brown.
- In oven-safe bowls, ladle soup and top with toasted baguette and shredded Gruyere.
- Broil until cheese is bubbling and golden, about 3-5 minutes.
- Serve hot, garnished with additional thyme if desired.
Notes
- For a deeper flavor, use a mix of beef and chicken stock.
- Experiment with different cheeses like Emmental or Swiss for variation.
- Ensure the onions are well caramelized for the best taste.
- Consider adding a splash of sherry for added complexity.
