Ingredients

  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup chopped nuts
  • 1/2 cup brandy or orange juice

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a bowl, mix dried fruit with brandy and let it soak for at least an hour.
  3. In a large bowl, cream the butter and brown sugar until fluffy.
  4. Add eggs one at a time, mixing well after each.
  5. In another bowl, combine flour, baking powder, cinnamon, and nutmeg.
  6. Gradually add the dry ingredients to the wet ingredients.
  7. Fold in soaked fruit and chopped nuts.
  8. Pour the batter into a greased cake pan.
  9. Bake for 1.5 hours or until a toothpick comes out clean.
  10. Let the cake cool before serving.
