Ingredients

- 1 lb shrimp, peeled and deveined
- 4 tbsp butter
- 4 cloves garlic, minced
- 2 cups cauliflower, steamed and mashed
- 1 cup broccoli, steamed
- 1 cup bell peppers, diced
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- In a skillet, melt butter over medium heat.
- Add minced garlic and sauté until fragrant.
- Add shrimp and cook until pink and opaque.
- Season with salt and pepper.
- In a bowl, place the mashed cauliflower.
- Add steamed broccoli and bell peppers on top.
- Spoon garlic butter shrimp over the veggies.
- Garnish with fresh parsley.
Notes
- Adjust seasoning as needed.
- Replace cauliflower with mashed potatoes if preferred.
- Can add other vegetables like zucchini or spinach.
