Ingredients

  • 1/2 cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Salt and pepper to taste
  • 1 lemon, quartered

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, mix softened butter, minced garlic, parsley, thyme, rosemary, salt, and pepper.
  3. Pat the chicken dry with paper towels.
  4. Rub the garlic herb butter all over the chicken, including under the skin.
  5. Stuff the cavity with lemon quarters.
  6. Place the chicken in a roasting pan.
  7. Roast the chicken for 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
  8. Let it rest for 10-15 minutes before carving.
