Description

This dish features tender garlic herb chicken served with creamy mashed potatoes and roasted carrots.


Ingredients

  • 4 chicken breasts
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup heavy cream
  • 4 tablespoons butter
  • 1 pound carrots, cut into sticks
  • 2 tablespoons honey

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix garlic, olive oil, thyme, rosemary, salt, and pepper.
  3. Coat the chicken breasts with the mixture.
  4. Place the chicken in a baking dish and bake for 25-30 minutes.
  5. While the chicken bakes, boil the potatoes in salted water until tender.
  6. Drain the potatoes and mash them with heavy cream and butter.
  7. Toss the carrots with honey, salt, and pepper, and roast in the oven for 20 minutes.
  8. Serve the chicken with mashed potatoes and roasted carrots.
