- 4 chicken breasts
- 4 cloves garlic, minced
- 2 tablespoons olive oil

- 2 pounds potatoes, peeled and cubed
- 1/2 cup heavy cream
- 4 tablespoons butter
- 1 pound carrots, cut into sticks
- 2 tablespoons honey
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix garlic, olive oil, thyme, rosemary, salt, and pepper.
- Coat the chicken breasts with the mixture.
- Place the chicken in a baking dish and bake for 25-30 minutes.
- While the chicken bakes, boil the potatoes in salted water until tender.
- Drain the potatoes and mash them with heavy cream and butter.
- Toss the carrots with honey, salt, and pepper, and roast in the oven for 20 minutes.
- Serve the chicken with mashed potatoes and roasted carrots.
