Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Season the beef roast with salt, pepper, and mustard.
  3. Place the roast in a roasting pan.
  4. Add chopped onions, carrots, and potatoes around the roast.
  5. Pour beef broth over the roast and add juniper berries.
  6. Cover the pan with foil and roast for 1.5 hours.
  7. Remove the foil and roast for an additional 30 minutes.
  8. Serve with sauerkraut on the side.
