- 4 large potatoes, peeled and grated
- 1 onion, finely chopped
- 2 eggs
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Oil for frying
Instructions
- Grate the potatoes and onion into a bowl.
- In a separate bowl, combine eggs, flour, salt, and pepper.
- Add the potato mixture to the egg mixture and stir well.
- Heat oil in a skillet over medium heat.
- Spoon the potato mixture into the skillet and flatten slightly.
- Cook until golden brown, about 4-5 minutes per side.
- Remove and drain on paper towels.
- Serve hot with applesauce or sour cream.
Notes
- Use starchy potatoes for best results.
- Adjust seasoning to taste.
- Keep pancakes warm in the oven while frying the rest.
