- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup brown sugar
- 4 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 4 large eggs
- 1 cup sour cream
- 1 tablespoon vanilla extract
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs, melted butter, and brown sugar. Press the mixture into the bottom of a 9-inch springform pan.
- In a large mixing bowl, beat the cream cheese until smooth.
- Add granulated sugar, and mix until combined.
- Add eggs one at a time, mixing well after each addition.
- Stir in sour cream, vanilla extract, and spices until fully incorporated.
- Pour the cheesecake batter over the crust in the springform pan.
- Bake for 60-70 minutes, or until the center is set and slightly jiggly.
- Turn off the oven and let the cheesecake cool inside for 1 hour.
- Remove from the oven and refrigerate for at least 4 hours or overnight before serving.
Notes
- For a decorative touch, top the cheesecake with whipped cream and gingerbread cookies.
- Experiment with adding a layer of caramel sauce on top before serving.
- Consider using a water bath to prevent cracking.
