A delicious gluten and dairy free Thanksgiving feast.
Ingredients

- 2 cups gluten free all-purpose flour
- 1 cup almond milk
- 1/2 cup coconut oil
- 1 cup maple syrup
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 teaspoon salt
- 4 cups mixed vegetables (carrots, green beans, potatoes)
- 1 tablespoon olive oil
- 2 teaspoons herbs (thyme, rosemary)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix gluten free flour, baking powder, and salt.
- Add almond milk, coconut oil, maple syrup, and vanilla. Stir until smooth.
- Pour the batter into a greased baking dish.
- In another bowl, toss mixed vegetables with olive oil and herbs.
- Spread the vegetables around the batter in the baking dish.
- Bake for 30-35 minutes or until golden brown.
- Let it cool before serving.
Notes
- Make sure all ingredients are certified gluten and dairy free.
- Adjust cooking time based on your oven.
- You can add more vegetables based on preference.
