Ingredients

  • 1 cup almond milk
  • 1/2 cup coconut oil
  • 1 cup maple syrup
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 4 cups mixed vegetables (carrots, green beans, potatoes)
  • 1 tablespoon olive oil
  • 2 teaspoons herbs (thyme, rosemary)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix gluten free flour, baking powder, and salt.
  3. Add almond milk, coconut oil, maple syrup, and vanilla. Stir until smooth.
  4. Pour the batter into a greased baking dish.
  5. In another bowl, toss mixed vegetables with olive oil and herbs.
  6. Spread the vegetables around the batter in the baking dish.
  7. Bake for 30-35 minutes or until golden brown.
  8. Let it cool before serving.
