Ingredients

  • 1 cup almond milk
  • 1/2 cup coconut oil
  • 1 cup pumpkin puree
  • 1/2 cup maple syrup
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup chopped cranberries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix gluten-free flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, combine almond milk, coconut oil, pumpkin puree, and maple syrup.
  4. Mix the wet ingredients into the dry ingredients until well combined.
  5. Fold in chopped cranberries.
  6. Pour the batter into a greased baking dish.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Let cool before serving.
