Ingredients

- 2 cups gluten-free flour
- 1 cup almond milk
- 1/2 cup coconut oil
- 1 cup pumpkin puree
- 1/2 cup maple syrup
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1 cup chopped cranberries
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix gluten-free flour, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, combine almond milk, coconut oil, pumpkin puree, and maple syrup.
- Mix the wet ingredients into the dry ingredients until well combined.
- Fold in chopped cranberries.
- Pour the batter into a greased baking dish.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store leftovers in an airtight container.
