- 1 cup gluten free all-purpose flour
- 1/2 cup sugar
- 1/2 cup unsalted butter, softened
- 1/4 cup lemon curd
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together butter and sugar until light and fluffy.
- Add in the egg and vanilla extract, mixing well.
- Stir in the lemon curd until fully combined.
- In a separate bowl, mix the gluten free flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until combined.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Store cookies in an airtight container.
- For more lemon flavor, add lemon zest to the dough.
- Adjust baking time for larger or smaller cookies.
